A brand of sake in Hidaka, “GINSEI” Raw
“GINSEI” is a title given only to GINKE sake which has large and beautiful silvery body among GINKE caught in offshore Hidaka district, Hokkaido.
We, Maruden corporation are not only chief fishermen but also “GINSEI” trader approved and selected by Hidaka fixed-net shore fishing association.
*”sake” is wild salmon
Salted GINSEI (sake) finely made with traditional process of YAMAZUKE.
Best for a special gift.
Also, whole fish, already sliced “GINSEI YAMAZUKE” is available.
Totomurasaki (fish sauce)
Original “sake sauce” made by thoroughly and naturally maturing fresh sake.

”Flying” sake roe cooked in “Totomurasaki”
Sake roe caught in the morning cooked in original fish sauce “Totomurasaki”. Sent off within the same day as it is still fresh without frozen.

Olive de Salmon
“GINSEI” is the silver salmon off the coast of Hidaka, Hokkaido. Coating with olive oil and some salt will provide you the perfect fillet. This elegant taste and texture of “Olive de Salmon” are similar to prosciutto ham, and it is a perfect match with French dish, Italian dish, and even for Sushi. It can be defrosted in 6 to 8 hours with refrigerator(under 10℃).
Our signature salmon jerky is made with salmon and cheese from Hokkaido. Hint of spices will provide you the perfect taste. The long and thin shape is easy to munch on with drinks, and you can cut and put on salad as salmon bits.
